Easy Grilled Whole Chicken

1 whole chicken, cut in half lengthwise
Salt and pepper, to taste
1 clove garlic, smashed
2 tablespoons olive oil
1/4 bunch fresh thyme leaves
Heat your grill to medium heat. With clean hands, generously rub the chicken with olive oil and season with salt, pepper and fresh thyme, then set aside.
Place the chicken, skin side down, on the grill and sear for 3 minutes. Turn the meat over and let cook for 30 minutes.
Remove the chicken from the grill and let rest for 5-6 minutes. Slice the meat into thick pieces, garnish with parsley and serve warm.
